国内外から多様なゲストが集まるライフスタイルホテル「HOTEL GRAPHY 根津」の朝食メニューリニューアルを監修しました。「Comfort & Discovery」をテーマに、定番メニューの安心感のなかに谷根千のローカルカルチャーと出会う新しい発見がある、ワンプレートスタイルのモーニングを提案しています。
メニューには地元のパン屋さんやお肉屋さん、ホテルにゆかりのあるコーヒーショップの鯖缶など、近隣のローカル素材を積極的に採用。スタッフが料理を提供する際、食材の背景を自然に紹介することでゲストとの会話が生まれ、その日の街歩きのきっかけとなるような「ホテルと街を繋ぐシチュエーション」をデザインしました。
また、ヴィーガン対応のフムスサンドから食べ応えのあるローストポークまで、多様な食習慣に寄り添うバリエーションを用意すると同時に、ホテル内でのサステナビリティの仕組みも構築しています。店内で使いきれなかったパンをフレンチトーストへ活用する食品ロス削減の導入や、冷凍保存・前日仕込みが可能なメニューを組み合わせることで、朝の現場のオペレーション負荷を軽減。スタッフが心にゆとりを持ってゲストと向き合える環境を整え、質の高いおもてなしへと還元される、無理のない豊かな循環を目指しました。
We supervised the renewal of the breakfast menu for HOTEL GRAPHY NEZU, a lifestyle hotel that attracts a diverse range of domestic and international guests. Under the theme of "Comfort & Discovery," we designed a one-plate morning experience that combines the familiarity of classic breakfast dishes with fresh discoveries of Yanesen’s local culture.
The menu actively incorporates ingredients from the neighborhood, such as bread from a local bakery, meat from a local butcher, and mackerel cans from a coffee shop closely connected to the hotel. By having staff naturally share the stories behind these ingredients when serving, we designed a situation that sparks conversation with guests and inspires them to explore the town, creating a seamless connection between the hotel and the local community.
While providing options to accommodate diverse dietary habits—ranging from vegan-friendly hummus sandwiches to hearty roast pork—we also established a sustainable workflow within the hotel. To reduce food waste, leftover bread from daily service is upcycled into French toast. Additionally, by combining dishes that can be prepped ahead or frozen without compromising quality, we minimized the operational burden on the morning kitchen staff. This setup allows the team to interact with guests with ease and peace of mind, fostering a sustainable cycle that directly translates into high-quality hospitality.
